When it comes to interiors, we often like rustic country interiors filled with antiques; with natural shades and layered tones. However, when it’s done well, bright, contemporary homes with a mid-century-modern feel can really work for us too!

This is such a lovely, optimistic, inviting dining area. With its festive decorations, it’s the perfect place to spend a colourful Christmas. Light floods in from the big window and bounces off the white walls and floor. They provide the perfect backdrop for the bold colours and greenery.

There’s interest all around and your eyes flit from each piece of furniture, artwork or plant – then go back to the beginning again. The large table looks like it might serve as the hub of the home. It could be used as eating, crafting or a kids’ homework station.

Cakes & Bakes: Yule log

Home-made Yule log | H is for Home

Continuing with the seasonal Cakes & Bakes recipes, this week I made a Christmas Yule log. It’s the perfect sweet course alternative for people that don’t like dried fruit-filled Christmas pudding, Christmas cake or mince pies.

This cake is basically a chocolate Swiss roll with chocolate filling and chocolate icing on the outside. Apparently, a Yule log can trace its history back to the time of the Druids. It was later taken up by Christians: “As the fire grew brighter and burned hotter, and as the log turned into ashes, it symbolized Christ’s final and ultimate triumph over sin.”

I still don’t have a proper Swiss roll tin, so I used a rectangular, loose-bottomed tart tin. So that the sponge didn’t turn out too thin and biscuity, I didn’t allow the batter to spread all the way into the corners.

The trickiest part of the process was rolling up the still warm sponge with a clean, damp tea towel. It helps stop the sponge from cracking when rolling it up after filling. Don’t worry if it does though – it will be getting covered up with buttercream… which can hide a multitude of mistakes!

Yule log
Serves 6
For the sponge
  1. 3 eggs
  2. 75g caster sugar
  3. 1 tbsp cocoa powder
  4. 50g plain flour
For the filling
  1. 50g butter, softened
  2. 75g icing sugar
  3. 1 tbsp cocoa
For the icing
  1. 75g butter, softened
  2. 75g icing sugar

For the sponge
  1. Pre-heat the oven to 200°C, 180°C (fan), 400°F, Gas mark 6
  2. Line a 23x32cm/9x13" Swiss roll tin with parchment
  3. Separate the eggs into two bowls and beat the whites until stiff
  4. Add the sugar to the yolks and beat until thickened
  5. Sieve the cocoa powder over the yolks and beat again
  6. Gently fold the egg whites into the yolks with a metal spoon, using a cutting and turning action
  7. Sieve the flour into the bowl and gently combine by cutting and folding with the spoon
  8. Pour the mixture into the prepared tin, spreading it out to the edges
  9. Bake for 10-12 minutes
  10. Slightly dampen a clean tea towel
  11. Slide the hot cake, still on its parchment, onto the tea towel
  12. Roll up the sponge, on the parchment, in the tea towel and leave to cool
For the filling
  1. Put the filling butter into a bowl and beat it until it is light and fluffy
  2. Sieve the icing sugar and cocoa powder into the bowl and beat until combined and soft
  3. Gently unroll the cold sponge and loosen it from the parchment paper
  4. Spread the filling evenly over the inside of the sponge
  5. Roll up the filled sponge
For the icing
  1. Put the topping butter into a bowl and beat it until it is light and fluffy
  2. Sieve the icing sugar into the bowl and beat until combined
  3. Gently melt the chocolate and mix this into the bowl
  4. Spread the topping over the rolled up sponge
  5. Drag a fork or skewer through the icing to create a log texture effect

Cakes & Bakes: Christmas spiced shortbread

We’re continuing with the festive theme for December’s Cakes & Bakes –  this week’s recipe being delicious Christmas spiced shortbread.

These shortbreads have lots of plus points. They’re quite simple to prepare at this busy time of year, they look very attractive… and they fill the house with wonderful Christmas aromas too.

Simply combine all the ingredients together, press the pastry into moulds, release and bake.

They’d make a lovely home-made gift for someone special, wrap them up with pretty paper & string or present them in a glass jar decorated with ribbon, holly and/or fir cones. Alternatively, treat yourself to a batch – perfect with a warming cup of tea after a winter walk… or perhaps a glass of sweet sherry or port.

Christmas spiced shortbread
Ingredients
  1. 175g/6oz/¾ cup plain flour
  2. 50g/2oz/½ cup cornflour
  3. 1tsp mixed spice (or you could make your own from equal parts of ground cinnamon, nutmeg and ginger)
  4. 25g/1oz/¼ cup caster sugar, plus extra for sprinkling
  5. 25g/1oz/¼ cup soft brown sugar
  6. 115g/4oz/½ cup unsalted butter, chopped
  7. 1tsp vanilla pasteHome-made Christmas spiced shortbread ingredients

Instructions
  1. Preheat the oven to 160°C/325°F/Gas mark 3. Lightly flour the moulds (rice flour works well) and line a large baking sheet with parchment paper
  2. Sift the flour, cornflour and mixed into a mixing bowl. Mix in the sugars
  3. Rub the butter and vanilla paste into the spiced flour & sugar mixture until it binds together and you can knead it into a soft dough
  4. Place the dough into the mould and press to fit evenly and neatly (I went over it a couple of times with a rolling pin). Invert the mould on to the baking sheet and tap firmly to release the dough shape
  5. Bake for 35-40 minutes, until golden in colour
  6. Sprinkle the top of the shortbread with a little caster sugar and cool on a baking sheet
  7. Cut the large rounds into 'petticoat tails' while still warm
Notes
  1. We can attest that these are lovely with a little glass of sweet sherry!
