Since lock-down, Justin has been the one that’s been going into the supermarket while I wait in the car outside. Last week, I asked him to get me some walnuts as they’re great in chocolate cake and brownies. When he got back to the car, he said that there weren’t any walnuts, so he bought a bag of pecans.

I love pecans, they’re one of my favourite nuts; I’ve used them in mixed nut brittle, cookies and blondies. This time I’ve made a pecan toffee loaf cake.

The original recipe, from the BBC Good Food website, is double the amount and makes a round cake that serves eight. There are only 2 of us, so I made a little loaf cake. After I’d put it in the oven, I thought that it would have improved it if I’d sprinkled a couple of tablespoons of Demerara sugar over the top first. It would have given an extra crunchy bite… next time, maybe.

It went down a treat with a cupppa (coffee for me, tea for Justin) – the toasted pecan topping, the little bit of mixed spice and drizzle of maple syrup at the end really worked well together. A side serving of vanilla ice cream is another yummy accompaniment.

Ingredients
  1. 150g/5oz pecan halves
  2. 70g/2½oz stoned dates
  3. 100g/3½oz butter, softened, plus extra for greasing
  4. 100g/3½oz light muscovado sugar
  5. ½tsp mixed spice
  6. 2 eggs, beaten
  7. 70g/2½oz self-raising flour

Instructions
  1. Put 50g of the pecans into a food processor and pulse until fine before decanting them into a mixing bowl
  2. Put the dates into a small saucepan with enough water to cover, boil for 5 minutes until very soft. Drain, discarding the liquid, then whizz in the processor until puréed. Leave to cool
  3. Heat your oven to 180ºC/fan 160C/Gas mark4
  4. Butter and line a 500g/1lb loaf tin
  5. Beat the butter, sugar and spice together until lighter and creamy
  6. Tip in the dates, ground pecans, eggs and a pinch of salt and beat briefly until smooth
  7. Fold in the flour with a metal spoon, then spoon into the loaf tin and level the top
  8. Sprinkle the remaining pecans over the top (don't press them in), then bake for 30 mins or until risen and golden and an inserted skewer comes out clean
  9. Allow to cool for a few minutes before removing from the tin, slicing and serving

  1. Jane Hornby advises to serve warm, with generous drizzles of maple syrup and scoops of maple crunch ice cream

At first glance, ants don’t seem to be extremely unpleasant insects – there are certainly much more dangerous and damaging ones, for sure. But when it comes to having ants in the house, the matter becomes slightly more serious. Having bugs in the kitchen or the bathroom are not ideal, and what’s more, it’s often difficult to get rid of them. Ants are, apparently, one of the most common insects that like to ‘invade’ homes. What are the reasons for that and how to stop it?

Ants are insects which occur in more than thirteen thousand different species. They’re ubiquitous and they live in large groups – that’s why we see them in every garden, playground or woodland. But sometimes cases arise where ants don’t stay in their natural habitats and they venture indoors in search of food or other nesting opportunities. They’re not an extreme danger, but they can be annoying and disturb the usual order; often to such an extent that employing chemical repellents is needed. Ants are known to be very ‘clean’ creatures – they normally cooperate and clean the area around their nest. If you keep any food leftovers inside your house, for example in the kitchen, it’s more than likely that ants will come and investigate. Sometimes you may not even be aware that there’s something rotting or spilt in one of your cupboards – the presence of ants may be the indication. Also, especially if you have children or pets, ants are likely to be attracted by the food spilt or left on the floors. Kids and animals can be especially messy in this way, so if you don’t want ants in your house it’s important to keep the interior as clean as possible.

One of the most common reasons for the unexpected ants in your house may be the problems with windows or doors; when they’re leaky, they become an ideal entrance for ants. They’re so small that it’s no problem for them to sneak through. The same goes for pipes, for example, in the bathroom; ants love a wet and humid environment, so it’s not a problem for them to infiltrate through the plumbing. This can sometimes be problematic as the pipework is usually joined together, for example in block of flats, so if your neighbours have ants, you’re also likely to have them. How to get rid of the ants

There are actually a few methods of fighting ants in your house. The easiest one is to conceal all the food that may be tempting to them – ensure you don’t leave anything uncovered. Close all the cabinets and cupboards securely, keep your rubbish inside sealed dustbins. Also, fix any gaps and leaks in windows and doors, so that ants don’t have any access to the building interior. If you see ants in your bathroom, consider fixing or improving the hydraulic installation. Examples of natural insect repellents include vinegar or oxygen bleach; if you want to repel the ants, put a little of these on the floor, doors and work surfaces.

If these methods aren’t enough and you still suffer from the ants’ unwanted company, use a chemical insect repellent, but contact a specialist in extreme cases. There are some repellent substances which may not repel a specific kind of insects or may even be harmful to humans and pets. Ants – a continuous problem

Ants are a species that are vast and varied, they reappear in places from which they’ve previously been repelled. Even if many of the workers don’t survive, the queen is likely to send other ant-workers to the same place. As a result, you may suffer from recurring ant attacks in your house. If the problem returns systematically, it’s an idea to think about some kind of long-term disinfection solution.

Even though ants may seem innocent, they might be really problematic for our households and everyday life. In search of food or humid places, they can come indoors regularly, and once they don’t get repelled, they continue to invade on a continuous basis. First, it’s advisable to reorganise space and habits, for example, by keeping food stored properly. If this doesn’t help, using more invasive and chemical substances may be necessary. But, all in all, these are just ants – if some of them appear in your kitchen or bathroom from time to time, it’s not a reason to panic – they’re only a natural part of our ecosystem.

This New York City apartment is just so fun and bright filled with colourful art and jars of sweets – I have a real candy crush!

It’s the home of artist, Robyn Blair Davidson whose art adorns many of the walls and furniture. The bright canvases and pop art sweets are the stars of the show, so the furniture and rest of the décor is kept pared back.

Designer Desire: Joseph Herman

Josef Herman (1911-2000) was a Jewish Polish-born fine artist and painter. In 1938, he emigrated to Belgium and then on to the UK in during the 2nd World War. He went to Wales in 1944 and was especially taken by the industrial town of Ystradgynlais. He remained there for 11 years, during which time he created work that was heavily influenced by the local miners and surrounding area.

In his memoir published in 1975, Related Twilights: Notes from an Artists Diary he remembers:

It was in 1944, either a June or a July day, I can no longer remember, but I vividly recall the heat of that afternoon and how deeply I was struck by the quiet of the village around me. There was hardly a soul to be seen. In the distance, low hills like sleeping dogs and above the hills a copper-coloured sky – how often I later returned to the colour and mood of that sky! Its light reddened the stone walls of the cottages and the outlines of the stark trees. The railing and the cement blocks of the bridge had golden contours. Under the bridge, out of a cold shadow, trickled a pool of water which got thinner and thinner as it ran on amidst the dry stones and glittering pebbles. Then, unexpectedly, as though from nowhere, a group of miners stepped onto the bridge. For a split second their heads appeared against the full body of the sun, as against a yellow disc – the whole image was not unlike an icon depicting the saints with their haloes. With the light around them, the silhouettes of the miners were almost black. With rapid steps they crossed the bridge and like frightened cats tore themselves away from each other, each going his own way. The magnificence of this scene overwhelmed me.

Sitting can be painful

If you’ve worked sitting at a desk for any length of time, then you’ll know that after a while, it can get really painful. When you’re sitting down, there’s up to 90% more pressure applied to your lower back compared to standing, and sitting for extended periods of time can lead to disk damage and reduced flexibility in your spine. And if your desk, keyboard and monitor height aren’t optimal for good posture and you’re using a regular chair rather than an ergonomic one, you might be craning your neck and hunching your shoulders too, which can lead to pain and headaches from muscle overextension.

Standing reduces back pain

Back pain is a common complaint in offices; a big cause of it is sitting down all day. But on the other hand, standing periodically throughout the day can dramatically reduce any back pain that you experience. And, some research conducted on standing desks found that users also suffered from fewer headaches. However, while switching to an adjustable sit-stand desk is a great way to reduce some of the pain caused by sitting down for hours, if you work at a desk, it’s important to make sure that your desk, monitor and keyboard height are right for you. Sitting can lead to weight gain

Sitting is definitely not good for your waistline. In fact, obese people tend to sit for around two and a half hours more per day than people who are at an ideal weight. After sitting for just one hour, the production of Lipoprotein Lipase, a fat-burning enzyme, can decrease by as much as 90%. On the other hand, alternating between sitting and standing throughout the day can help you lose weight. When you go from sitting to standing, your heart actually beats ten times more per minute; if you stand for three hours per day, five days a week, you’ll burn around an extra 8lbs per year – that’s more than half a stone!

Healthy employees tend to be happy and more productive employees and so far, all the research around sitting is not looking good for your health and well-being. What a scorching few weeks we’ve just had! To me, summer officially begins when the wild elderflowers are in bloom.

I’ve long wanted a sambucus nigra – or black elder – for the garden; it’s just that little bit more exotic looking than the usual. What luck, I discovered that there’s one here in our new garden – and it’s a good size too!

As well as the elder, we have at least a dozen rose bushes; that’s when I decided this year, I’ll make elderflower and rose cordial.

I’d never attempted a Yotam Ottolenghi recipe before; they’re usually quite involved and require ingredients that aren’t the easiest to get hold of… pomegranate molasses, anyone? This one, for me anyway, is doable; florets of elderflower, petals from a single rose, a couple of lemons and caster sugar… that was it! The other great thing about the recipe was it makes less than a litre of the stuff; I find it much easier to double or triple up a recipe than to halve or quarter it. Or is it just me? How do you divide an egg by four?

Anyway, this will be an annual early summer ritual for me from now on. It’s gorgeous – a glug in a glass of fizzy water loaded with ice or a splash in a gin & tonic. I’m going to make some more before the elderflower season is over… I’m hooked!

Elderflower and rose cordial
Ingredients
  1. 100g elderflower heads (about 12 heads), gently rinsed
  2. Shaved skin of 2 small lemons
  3. 1 small red rose, petals picked (about 20 petals)
  4. 500ml boiling water
  5. 325g caster sugar
  6. 125ml lemon juiceElderflower and rose cordial ingredients

Instructions
  1. Put the elderflower in a large bowl with the lemon skin and rose petals. Pour over the boiling water and press down the florets, making sure they’re submerged. Leave to cool, then cover the bowl and leave to infuse at room temperature for about 36 hours.
  2. Strain the infusion into a medium saucepan, pressing against the flowers with the back of a spoon, to release all the liquid, and discard flowers, branches and rose petals. Add the sugar and lemon juice to the infusion, then turn on the heat to high and cook for three to four minutes, stirring, until the sugar has dissolved and the liquid is starting to simmer. Take off the heat, leave to cool, then pour into a sterilised bottle, seal and store in the fridge.
Notes
  1. The cordial keeps in a sterilised bottle in the fridge for at least a month. Makes 800ml
