I’ve had an opened tin of condensed milk in the fridge for about a month. Thanks to it being so sweet and thick – and that I covered it tightly with a silicone food coverit was fine to use after all that time.

I wanted to use it up by making something quick, sweet and tasty – almond chocolate fudge! I found the perfect recipe online on the Sweetest Menu blog. I only had half a tin of milk remaining, so I simply halved the amounts.

It was so lovely – just a couple of squares is enough, though – it was very sweet. I think it would also make a delicious icing for the top of a layered sponge; perhaps a chocolate or mocha cake.

Almond chocolate fudge
Yields 16
Ingredients
  1. 300g/10½oz dark chocolate
  2. 35g/1¼oz unsalted butter
  3. 300g/10½oz condensed milk
  4. 1tsp vanilla extract
  5. pinch of salt
  6. ½tsp baking soda
  7. 120g/4¼oz chopped almonds, toastedAlmond chocolate fudge ingredients

Instructions
  1. Grease and line a 20cm/8" square baking tin with baking or parchment paper
  2. In a large mixing bowl, add your chocolate and butter and then place on top of a saucepan filled with about 5cm/2" of water - ensuring the bottom of the bowl doesn't touch the water beneath
  3. Pop onto a medium-low heat, stirring occasionally until completely melted
  4. Gradually stir in your condensed milk, vanilla, salt and baking soda and gently stir until it all comes together
  5. Remove from the heat, throw in your nuts and mix through
  6. Moving quickly as it will begin to set, pour the chocolate mixture into your prepared pan and gently smooth over the top
  7. Cover and refrigerate for at least 2 hours or until firm
  8. Cut into small squares and serve

The cake delivers everything that you might expect from a chocolate fudge tart – it’s intense, rich and smooth on the palate. A small amount of salt flakes add a delicious, subtle contrast to the sweetness. There’s flexibility regarding the chocolate that you incorporate depending upon your personal taste or budget. You also have the option to add a bit of booze if you like. Rum, brandy, Cointreau, amaretto, Kahlua – maybe a bit of whisky. Perhaps you’ve got some of those left over from Christmas (or is that wishful thinking again?). Wherever you get the ingredients from, make sure to give it a try.

For the biscuit base
  1. 150g/5¼oz Hob-nobs
  2. 45g/1½oz cocoa powder
  3. 45g/1½oz light brown sugar
  4. ¼tsp table salt
  5. 80g/2¾oz salted butter, softened, plus extra for greasing
For the filling
  1. 1 x 400g/14oz tin condensed milk caramel*
  2. 375g/12¼oz dark chocolate
  3. 150g/5¼oz double cream

For the tart case
  1. Line the base of a 25cm round tart tin with greaseproof paper, grease the sides with some extra butter
  2. In a food processor, blitz the Hobnobs, cocoa powder, sugar and salt
  3. Add the butter and pulse a few times to incorporate
  4. Firmly press the crumb mixture into the tin, taking extra care with the sides and aiming for an equal thickness throughout
  5. Chill for 10 minutes in the freezer
  6. Bake the tart case at 200ºC/390ºF/Gas 6 for 10-12 minutes. Set aside to cool
For the chocolate fudge filling
  1. Put all the ingredients (apart from the salt flakes) into a saucepan and gently warm over a low-medium heat. Keep stirring the mixture until the chocolate has melted and the ganache is smooth and glossy
  2. Pour the filling into the cooled tart case and chill in the fridge for a couple of hours
  3. Just before serving, sprinkle with the salt flakes

  1. *I make my own by boiling an unopened tin of condensed milk for an hour. I boil a few tins at a time and keep them for making things like banoffee pie and millionaire's shortbread.
